Christmas Eve in NY

So this is my first non Florida Christmas and its a little weird. I don't have any vacation days yet at work so I couldn't go home. Lucky enough my mom and sister are currently on a plane on their way up to spend Christmas in New York. Their flight got delayed two hours so I'm pretty much spending tonight alone. It's mildly depressing, so I can't wait for them to get here. 

I've been keeping myself busy today though. Left work early because it was dreadfully slow. Picked up some last minute groceries and wine, brought some things over to my new apartment, made an egg and cheese sandwich, baked, and I'm about to pack some boxes. Not exactly my typical Christmas Eve. 

So I tried making these red velvet sandwich cookies. I hope they taste as good as they look! I tried the filling and it was great! I can't wait to try them tomorrow. Check them out below.
